Mardi Gras refers to the "week of seven fat days" for Christians. Tuesday, the day of Carnival, is the last day before the start of a period of fasting, Lent, during which Christians are encouraged to eat lean and, in particular, no meat. The word Carnaval comes from this origin: in Latin, "carne levare" means "to remove the flesh", and therefore to do away with meat.
